Breakfast is one of my top three favorite meals — especially when we’re camping.

We usually start the day with a family walk to the bath house — teeth brushed, faces washed, everyone still a little groggy. Then it’s back to camp for the real wake-up call: coffee for the grown-ups, hot chocolate for the kids.

Most of our food comes from Trader Joe’s — it’s our go-to. I’m a fan of their olive oil spray (basically Pam without the weird stuff), and the metal canister means it survives the trip. Their Cold Brew Coffee and shelf-stable milk are great too — no cooler needed until you open them.

These days, my daughter’s taken over as head chef. If there are other kids around, we get them involved — cooking’s more fun when it’s a group effort. And the Coleman stove is much easier to cook over than the wood fire.

🥓 Favorite Camp Breakfasts

Bacon & Eggs

  • Toast bread in the pan with a little margarine
  • Cut bacon into squares and fry
  • Make eggs your way — scrambled or fried

Breakfast Burritos

  • Warm tortillas in the pan, then wrap in foil
  • Sauté onions and peppers
  • Add scrambled eggs and shredded cheese
  • Serve with salsa

Campfire Cakes (aka Pancakes)

  • Pre-measure pancake mix into a Ziplock before the trip
  • Bring a mixing bowl and measuring cup
  • Mix with water and eggs
  • Cook on a lightly oiled skillet
  • Top with syrup, fruit, nuts, or Nutella (or mix it in!)

Sausage & Egg Sandwiches

  • Toast English muffins on the skillet
  • Cook sausage patties or links and eggs
  • Assemble, add SPK (salt, pepper, ketchup)

Hash Browns with Veggies

  • Cook frozen hash browns in oil
  • Toss in sautéed peppers and onions
  • Add shredded cheese
  • Top with a fried or scrambled egg
  • (In college this was the “Asher Special”)

French Toast

  • Dip cinnamon raisin bread into scrambled eggs with a splash of milk
  • Cook until golden brown
  • Serve hot with syrup, berries, nuts, or bananas

When we are camping we like to serve breakfast hot as it comes out of the pan.
